Have you been thinking about growing your own food? Do not let weather or limited space keep you from beginning. With the right amount of planning and light, you can begin growing beautiful vegetables indoors. Growing beautiful vegetables indoors is rewarding and totally possible. Expect fresh at your fingertips sooner than you think. You do not need a green thumb rather a bit of patience and the ability to follow directions. My tips to you are to begin small and have reasonable expectations. Indoor growing will not yield as much as outdoor growing, however the effort is completely worth it. Now that I have your interest, let me share with you 3 easy to grow vegetables.

Supplies & Tips

You will need several small 4 inch containers. Your containers should have holes for proper drainage. Use a good quality potting mix. Potting mixes are best for drainage and also because potting mix is sterile. In the winter, you may consider purchasing a plant light to account for the shorter days. Lastly, will also need garlic cloves, lettuce leaves, and scallions. 

Garlic Greens

You will not have success by growing garlic bulbs indoors, but garlic greens are excellent! By comparison, they taste a lot like scallions and garlic. Have you ever reached for a clove of garlic and all of a sudden realize there is a little green foot on it? As soon as you notice a green foot, you are ready to plant it. Plant your clove in a small 4 inch container about 1 inch deep into the soil. Next water it. In due time, you will be able to enjoy garlic greens. You can begin to harvest your greens when they are between 8 and 10 inches in length. Being that you will get one garlic green stalk per garlic foot, plant multiple cloves at the same time.

Lettuce

Do not throw away left over leaves when you can grow them. Instead, place them in a bowl with just an inch of water. Then place the bowl in an area that receives good sunlight. Mist the leaves with water a couple of times each week. Meanwhile, make sure the water bowl continues to have 1 inch of water. In about 4 days you will notice roots and new leaves. Now it is time to transplant your lettuce into soil. Plant in a shallow container with potting mix so that they can continue to grow. Lastly, harvest lettuce leaves as needed.

Scallions

I love scallions. To begin with, you are simply able to root the entire scallion in a glass filled with 1 inch of water. As long as your water line stays at 1 inch, you are good to go. Once roots have reached a couple of inches in length, move them to a shallow container with potting so that they can continue to grow. You can use the green tops in many dishes. Just be sure to leave about a 1 inch stem for continued re-growth. You can also pull out the entire scallion from the container if you wish to use the white bulb.
